2012 isn't starting off to be such a bad year. Our debt and credit and finances have been such a struggle, like everyone else, I know. Partly us, partly life. But things are coming around. Last month I managed to pay all of the utility bills in full - been behind since the beginning of time- this month is the 1st in I don't know how long that I don't have a pink bill sitting in my mailbox. Also, I went to a bank inside Kroger and even with my credit issues and turn-downs from other banks in the area, I was given a bank account in less than 10 minutes for a $1 deposit. And it's a great bank, open 7 days a week, open late, and only closes for 3 holidays per year, been in business for over 100 years.
And, I learned my lesson, mine is the ONLY name on it. There will be no mysterious shoe purchases attached to this account number ever.
Tonight I'm making a quick dinner of grilled chicken, rice and green beans. I want chicken and dumplings but I can't convince K he wants chicken and dumplings too so grilled it is. My last batch of chicken and dumplings was so freaking tasty I have to toot my own horn LOL. It's almost haunting me! And it was so easy. It's only kinda cooking using store bought stock- Rachel Ray in a box (I know nothing of Rachel Ray I only bought her brand because I liked the price) and 2 cans of regular chicken broth (I wasn't sure if the box was enough and the store brand chicken broth is only .49C so I got it just in case. Anyway I boiled 3 boneless, skinless breasts in the stock and broth (I was right the box wasn't enough) and then took them out and shredded. I used Pillsbury Grands Flaky biscuts (the 10 count) and peeled the biscuts into 3 layers. Dipped each layer into peppered flour, tore it into pieces and plopped them into the broth. If you try this the broth has to be almost bubbling but NOT. And you can't stir the dumplings or they will desolve and you will have dumpling flavored soup. You just press them down gently into the broth. Then, when they are done add the shredded chicken. You can stir gently by then they won't dissolve. The broth thickened nicely without adding anything extra and it was even better the next day. I always serve mine with mashed potatoes. I doubt I'll make it any other way again but this!
My boss has left me alone in the office again today. I hate being up here alone as I get bored and start getting hungry and I can't leave because I'd have to close the office and he HATES that. So I sit here hungry and start googling recipes.
And then I find things like these Glazed Doughnut Muffins and I want to put as many in my mouth as possible.
Anyway I've lost my train of thought, both daughters have called. They are fighting and both needed to tell me that they are fighting I guess. I refuse to get in the middle or take sides or say who I think is right or wrong. So I'm gonna go and think about glazed doughnut muffins.
